Eating raw crab is generally considered unsafe due to the risk of harmful bacteria, parasites, and foodborne illnesses. Raw crabs can harbor pathogens such as Vibrio cholerae, Vibrio parahaemolyticus, and the lung fluke parasite (Paragonimus westermani), which can cause serious health problems ranging from food poisoning to long-term parasitic infections[1][3][5].
Unlike seafood such as tuna or salmon, crab meat is not commonly eaten raw because of its higher risk profile. Cooking is the only reliable way to eliminate these microorganisms and ensure crab is safe to eat. Marinating or salting crabs—even in strong solutions like soy sauce or wine—does not remove these health risks[1].
Symptoms of infection can include severe diarrhea, vomiting, abdominal pain, fever, and, in parasitic infections, coughing, chest pain, and even neurological symptoms if parasites migrate to the brain. These illnesses can sometimes have a long onset period and may persist for years if not properly treated[1][3].
While there are rare instances of raw crab being served as a delicacy in certain cuisines, strict food safety protocols must be followed. This involves selecting high-quality, fresh crab from trusted suppliers that adhere to rigorous hygiene standards, thorough cleaning, and removing parts like gills and internal organs to reduce risks. However, this does not eliminate all dangers, and some public health organizations strongly advise the general public—especially vulnerable groups like the elderly, young children, pregnant individuals, and those with weakened immune systems—to avoid raw crab entirely[7][5][1].
For safety, thoroughly cooking crab is the best and most widely recommended method to prevent illness[2][3].
